Also, Rocket Boys! Wait, what? You don’t know who the Rocket Boys are?! Just sit right there and allow me to educate you. BUT I HIGHLY suggest you read the book FIRST and then watch the movie. The story of Rocket Boys (you may be more familiar with October Sky) was written by none other than West Virginia’s famous Homer Hickam.
The story takes place in Coalwood, West Virginia and is a true story about Homer and his friends building rockets in rural West Virginia back in 1957. The story was originally written as a publication in the Smithsonian’s Air & Space magazine but received so much praise in 1995, that Homer then went on to turn it into a book thrusting him into international fame. As with most good books, a movie follows.

Makes – 12 rolls

Ingredients to make air fryer pepperoni rolls

3 cups of Bread Flour + more for dusting( I use King Arthur)

1 cup of Warm Water

¼ cup of Olive Oil
-
1 teaspoon of Salt
-
add 1 packet Active Dry Yeast
-
1 large Egg
-
4 oz. of sliced Pepperoni
-
½ cup of shredded Mexican Blend Cheese
Fleischmann’s Active Dry Yeast,0.25 Ounce, 3 Count (Pack of 2)

Instructions to make this air fryer recipe
Heat the water in the microwave for 30 seconds. The temperature of the water should be between 100F to 115F. If it is too hot, let it sit on the counter until it cools down to the correct temperature.
Add the oil, sugar, salt and the yeast to the water and stir to mix. Leave it undisturbed for 10 minutes.
The yeast will start to foam and bubble.
In a large bowl, add the bread flour. Make a well in the middle and add the egg and the yeast water.
Mix everything with a silicone spatula until it comes together in a sticky dough. Cover and let it proof for 2 hours in a warm dry place.
By the end of 2 hours, it would have doubled in size. Punch the air out the dough and knead it till smooth.
Form a ball and cover it again and let it proof for another hour in a warm dry place.
Now turn the dough onto a good flour surface and knead it again for a minute. Form the dough into a round.
Divide the dough into quarters and then divide each quarter into thirds. You should get 12 balls out of the dough.
Flatten each ball and place about a tablespoon of shredded cheese and 4 to 5 slices of pepperoni on each flat dough. Fold one side over to the other and pinch the seams together, sealing the seams. Fold the corners and do the same.
Place all the stuffed rolls in a baking tray and cover with a kitchen towel and let it rise one last time for 30 minutes.
Place 4 rolls in a greased air fryer or CrispLid.
Air fry at 370F for 7minutes.
Repeat with the rest of the rolls
Serve warm.

I think that a nice salad would be a great accompaniment to this delicious and simple meal. In my house, we normally don’t worry about having anything extra besides this! It’s just that good. Note: These make a great treat for a picnic or food to pack for a road trip.
How do you store leftovers of these Air Fryer pepperoni rolls?
If you happen to have leftovers, consider yourself lucky. This just means that you’ll get to enjoy them for another meal! Simply store them in an airtight bag or sealable container and place them in the fridge. They should be good for several days, but honestly won’t last that long, especially if you have a teenaged son!
Is this Air Fryer pepperoni rolls recipe soy free?
It is! My youngest son has a soy allergy (yes, it is real) and I refuse to deny him of these wonderful pepperoni rolls! If you or your family are restricting soy also, this recipe will work for you. What happens if my bread dough didn’t rise while it was resting?
This could be because the active yeast has expired or is no longer good. Depending on the age of your yeast, it may not activate with the rest of the ingredients. One way to check is if you don’t notice it starting to “foam” up after you add it to the water, then it’s probably too old and not going to cause the bread to rise.
