Bunny Butt Cake

Baking cakes with your children make magical memories. Baking a homemade Easter cake will be a memory that will be discussed and passed down when your kids become parents themselves. The kids get a kick out of this bunny digging cake and, to be quite honest, I love it, too! 

Not only are you going to get the recipe to make the homemade cake, but also how to make homemade frosting! Nothing is more enjoyable and satisfying than creating something from scratch from your hands.

How to cut a bunny cake

The hardest part about this cake is figuring out how to cut it! Since you’re technically making bunny butt cupcakes,, you may find that cutting off that portion of the cake first and then cutting into the “behind” is a tad bit easier approach. 

Or, you can just cut into and enjoy! Who says that cutting a cake has to be pretty?

How to make an Easter Bunny Butt Cake

How to bake the bunny cake

1) Preheat oven to 325F.

2) Add the dry cake ingredients and butter to a large bowl. Using an electric hand mixer, combine ingredients into a crumbling texture.

3) Next, add the remaining cake ingredients to the dry ingredients. Mix with the hand mixer for 2-3 minutes into a batter.

4) Place 4 cupcake liners into a muffin pan and fill the liners 3/4 full with the batter. Pour the rest of the batter into an oven-safe 1 1/2 quart bowl that has been greased and floured to prevent the cake from sticking.

5) Bake the cake and cupcakes in the oven to bake. Bake the cupcakes for 18-20 minutes and the cake in the bowl for 45-50 minutes or until done. Let the cakes cool completely before frosting and assembling.

How to make the homemade cake frosting:

1) Add all the frosting ingredients to a large bowl. Using a hand mixer, combine for 3-5 minutes until smooth. Set aside or refrigerate until ready to use.

How to assemble the bunny booty cake

1) Lay the round cake from the bowl on a plate or cake pan with the top side up. Using a serrated knife, trim off the curved portion of the top so that it will sit flat on your plate. Flip the cake upside so that the cut portion is facing the bottom and center the cake on the plate.

2) Frost the cake with the frosting so that it’s completely covered. Wipe the edges of the plate clean.

3) Remove the wrappers from the cupcakes and cut 1 cupcake in half so that it’s shaped like 2 half circles.

4) Next, shape the legs of the bunny by placing a pretzel stick in the bottom center of a cupcake, leaving some of the pretzel sticking out. Attach the cupcake to the side of the cake by pressing the pretzel into the cake. Repeat with another cupcake to make the second leg.

Be sure to leave an inch or two of space between the legs. Use the cupcake halves to make the feet longer by placing one half on top of each foot and attaching it with a pretzel. Finally, use the remaining cupcake to make a tail. Be sure to use another pretzel to attach it to the cake.

5) Completely cover the feet and tail with frosting. Then sprinkle the shredded coconut all over the cake and lightly press the coconut into the frosting to stick.

6) Mix the leftover coconut with the green food coloring to dye it to look like grass. Sprinkle the green coconut around the edges of the plate or cake holder.

7) Finally, press the candy melts and chocolate chips into the frosting on the feet to look like footprints. Make the toes face down. Decorate the grass with the candy eggs and enjoy!

Variations

If you fancy a different frosting, get creative and go with it. In fact, you can make your own homemade frosting recipe or buy from the store.

Tips for Making a Bunny Butt Cake Recipe

Be sure to follow the cake directions as they’re written. You don’t want to overmix the batter as that could result in the cake being too dry. 

If you’re worried that the cake isn’t baked all the way, use the toothpick method to be sure. Take a clean toothpick and insert it into the center of the cake. If the toothpick is clean when you remove it, the cake is done and ready to be pulled out of the oven.

Be sure to let the cake cool before adding any frosting. If the cake is too warm, the frosting is going to melt right off and make a big mess.

How to store 

To store your rabbit cake, you’ll want to keep it in an airtight container in the fridge. You’ll need to use a cake pan with a raised lid so that you’re not smooshing any part of the rabbit’s butt. 

Can you freeze the baked cake? 

You can, but I don’t recommend it for this recipe. If you want to freeze the cake, do so before adding on any frosting.

Then, when you’re ready to thaw and enjoy, you can make the frosting fresh and apply and decorate.

This bunny butt cake is the cutest way to make a homemade Easter cake!

Cake Ingredients:

  • 2 1/4 cups gluten-free all-purpose flour
  • 1 cup sweetener
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 8 tbsp unsalted butter at room temperature (cut into cubes)
  • 2 egg + 4 egg whites
  • 1/2 cup melted coconut cream (unsweetened)
  • 1/2 cup crushed pineapple (drained, and unsweetened)
  • 2 tsp vanilla extract

Coconut Cream Cheese Frosting:

  • 2 - 8oz. blocks of cream cheese (softened)
  • 1/2 cup coconut cream (unsweetened)
  • 1 cup powdered sweetener (grind granulated sweetener in a blender if needed)
  • 1 tsp vanilla

Assembly:

  • 5 pretzel sticks
  • 8 oz package of shredded coconut (unsweeten, can sweeten if desired)
  • 6 sugar-free chocolate chips
  • 2 sugar-free chocolate candy melts
  • 8 drops green food coloring
  • small egg-shaped candies for decoration
