The Best Instant Pot Red Beans & Rice

 

I’m always on the lookout for a great Instant Pot recipe; especially one that I know will be tasty each and every time! And so many people tend to think that beans just aren’t good for a meal on their own, but they just couldn’t be more wrong!
 
This Instant Pot Red Beans and Rice can absolutely stand on its own. It’s packed with plenty of flavors, plus it’s hearty enough to stick with you and give you energy throughout the day. And when you’re a busy family on the go, you need a meal that you know you can count on time and again.
 
 
I can assure you that this Instant Pot recipe is one of those meals. I’ve relied on this countless times and I’m certain that I will again. It’s just so simple and easy that it’s a no brainer to make. And what’s even more, my kids actually really like it, too. They’ll eat it just like this without anything else and usually have a bowl for seconds! 
 
 
Even though you can eat this dish solo, there are some food items that you can pair together with this bean and rice recipe for a really awesome meal.
 
 

What can you serve with Instant Pot Red Beans and Rice?

There are so many options! You can serve up Instant Pot chicken recipes, pork recipes, or just some good old sausage to serve along with it. Don’t forget about a nice side of steamed veggies. I find that steamed vegetables give a really good contrast to this dis. 

Can you freeze the leftovers for later?

I actually do freeze this! But my tips are that you don’t freeze the rice. It makes for a weird texture and taste later that you just probably won’t like. Instead, freeze everything but the rice to use for later. Just make certain that you use a freezer safe bag and storage container and label it accordingly. That way, when it’s a month or so down the road and you’re wanting to eat it, you won’t be staring at it in the freezer trying to figure out what it is.

Instant Pot Red Beans & Rice

All you need are some simple and delicious ingredients to get started!

Ingredients to make Instant Pot Red Beans and Rice

1 medium onion chopped
3 stocks of celery chopped
One bell pepper chopped
1 andouille sausage links cut into 1/2 moons (cooked or raw)
1/2 tbsp Worcestershire sauce. NOTE: We only use Lea & Perrins because our youngest has a soy allergy.
2 tsp creole seasoning
1 lb. dry red beans (preferably soaked overnight)
3 tsp minced garlic
1/2 tsp pepper
4 cups chicken broth or stock. I make my own in the instant pot.
salt to taste
hot sauce to taste, if desired. There are two hot sauces that we can use with the soy allergy. Tapatio Hot Sauce & Franks Hot Sauce.

Directions to make Instant Pot Red Beans and Rice

 

1) Turn the Instant Pot to sauté. Add the sauces, onions, garlic, bell pepper, creole seasoning, and pepper. Sauté for 2-3 minutes to allow the flavors to release and mix.

2) Add the beans, celery, Worcestershire sauce, and chicken broth.

3) Close the lid and turn the pressure valve to sealing. Cook on high pressure using manual. Cook for 30 minutes if the beans have been soaked. If the beans haven’t been soaked cook for 60 minutes. Let the pressure release naturally, about 25 minutes.

4) Remove the lid and give it a good stir. Add more salt and hot sauce to meet your tastes. Let the beans cool for another 10 minutes before serving over cooked rice. Top with green onions.

5) Serve right away with rice. I make my rice in the instant pot and it is so delicious! By the way, have I mentioned I have FOUR instant pots? They sure do come in handy! To make your own, here’s my easy instant pot jasmine rice recipe. 

Note

This makes a lot of red beans and rice. I like to serve it for dinner then freeze the leftovers (minus the rice) to be eaten later that month. When ready to eat just defrost and reheat. Serve with a fresh batch of rice.

 

If you don’t eat rice, just leave it out. Even though it’s an ingredient in the title of the recipe, if it doesn’t fit your diet and your taste, don’t force it. Like I stated earlier, this Red Beans and Rice recipe can go perfectly with veggies or just a meat item as well. Another idea is to serve with cauliflower rice too. Tip-  you can make this recipe spicy if you want! Make certain that you dish out your own bowl or a family member’s bowl to spice it up with some extra hot sauce or even some fresh sliced jalapenos! Just be sure to have a glass of milk standing by to soothe the taste buds!
