In my home, New Years Eve is a night of fun and family. We’ve never been the type of family to go out onto the town to celebrate the coming of a new year. There are many reasons we don’t, but the main reason is fireworks. Fireworks are difficult for my family.

The sounds of loud, sudden booms and Clay’s PTSD do not work well together. Early in our marriage, we decided to develop our own celebrations and I wanted to share with you a fun activity you could do with your kids!

New Years Eve Countdown Cheesecake Bites

As our kids have gown, the activities have changed and evolved. It used to be, that I just cooked and prepared whatever we had that night. Now that the kids are bigger, it is so fun to have them join me in getting things ready for our celebration! This gives us a good chance to talk and have a conversation. We all know how important that is as kids become teenagers too!

I have found that sometimes kids also will open up more in the middle of projects vs feeling like they are being grilled. So thus these cheesecake bits were born!

Part of our New Years celebration just has to include sweets right? Our family loves cheesecake, so these cute cheesecake bits are perfect! Are you ready to see how simple it is to make “New Years Eve Countdown Cheesecake Bites“?

First, I’ll share what you will need to make these yummy snacks.

To make “New Years Eve Countdown Cheesecake Bites” you will need:

Jell-o No Bake Cheesecake Mix
Reese’s Peanut Butter Cups – King Size
Chocolate Melts…since I first created this recipe, we have to watch soy because of an allergy in my youngest. If that is the case for you too, you can get some delicious soy free chocolate melts!

Jell-O No Bake CheeseCake pkg. REESE’S King Size Peanut Butter Big Cup,Wilton Dark Candy Cocoa Melts Wilton 415-2179 300 Count Baking Cups

Get your kids involved in making these delicious treats. However, I recommend starting earlier in the day, especially with little hands that are ready to assist.

Beginning the preparations early sets the young ones in the mood to celebrate, but also allows more time to help with other fun recipes or games while waiting for the countdown. Also, starting earlier in the day ensures the cheesecake has time to set up.

New Years Eve Countdown Cheesecake Bites!

Get your kids involved in making these delicious treats.

Ingredients

1 Box Jell-O No Bake Cheesecake
12 Reese’s Cups Regular Size
½ Cup Chocolate Discs/Melts
Cupcake Liners
Sandwich size Baggie

Instructions

Place your cupcake liners in your cupcake pan.
Then place one Reese cup in each paper.
Make cheesecake according to package.
Fill each cupcake opening with 2 scoops of cheesecake then spread to flatten out.
Put in freezer for about 1 hour. (This makes them easier to handle while writing the numbers on them).
Now take your chocolate discs and put in a microwave safe bowl. Microwave for 30 seconds, then stir. Continue to do this until discs are all melted.
Spoon chocolate into the inside corner of a sandwich baggie. Snip off corner with scissors. (This will become your piping bag).
Pipe clock numbers around the cheesecake. You can pipe all the numbers or just 4 as shown in the pictures. Pipe on your hour and second hand as well. Because these are cold the chocolate hardens immediately, if you make a mistake just take off the number and start over.
Then they’re ready to serve!

How easy and fun is that? For many of us, we’re easily tempted to forgo allowing our kids be involved in making treats such as these. We think about the mess, or the numerous questions, or the impatience many children exude. We also look at time as a deterrent because, well, depending on what activities are planned for later that night, we tend to be more rushed.

However, I implore you to make these memories while they’re still young and willing to assist. We aren’t promised tomorrow so lets embrace today. Besides, you can make them help you clean up, too! Who knows? You might be teaching the next great culinary artist who opens their own restaurant and names the restaurant in honor of you or the memories that are being made now!
