Zuchinni Chips 1 1

Air Fryer Zucchini Parmesan Chips!

Are you looking for ways to eat healthier but also tasty and delicious? Try my recipe for Air Fryer Zucchini Parmesan Chips. If you’re not sure what to do with zucchini that’s overflowing in the garden, this is one of my easy zucchini recipes to try!

I grew up in the country. Like deep in the country. Back in West Virginia, we call it a hollar. Life was good back there. We were not rich but we were never hungry! I am thankful for our farm and vegetable garden that provided food for us all year-long. We would grow the food and harvest it. Then of course there was canning. Lots and lots of canning! I didn’t mind because I guess if you don’t know any different, you don’t know it is really that much work.

I loved helping my mom in the kitchen and I guess you could say, that is how this home on the interwebs has even came to be. The things I learned about homemaking, I learned back there in that hollar.

Now I get to share it far and wide with my readers. That makes me happy! So pour yourself a cup of sweet tea. I am so glad y’all are here! Sit back and get comfortable and enjoy looking over my recipe collection. There’s enough here to keep y’all busy for a spell.

Zucchini Recipes

Last week I posted a roundup of Air Fryer Recipes to kick off my latest kitchen gadget obsession. Between the Air Fryer and the Instant Pot, I believe I could probably get rid of my stove! It is so tempting, especially here in the heat of the south! If I just didn’t love my cast iron so much, that might be an option! lol

One of my favorite vegetables is the zucchini. If Bubba Gump was a zucchini company instead of a shrimp company, could you imagine all the different ways a person could make zucchini?!

My mouth is watering, y’all!

I love them in a salad, as a crunchy snack, grilled, sautéed, baked, canned, in a relish, and also fried.

Frying zucchini in the air fryer just got easier and tastier! This fantastic gadget locks in the natural flavors that seem to get lost while cooking more traditional ways.

Air Fryer Zucchini Parmesan Chips!

I like to consider myself a fried zucchini connoisseur.

I have been eating it my entire life, but after eating it out of the air fryer, I feel like I have missed out on so much taste and flavor. They are a great addition to your diet.

Can you ever have more than enough zucchini? I don’t think so. They are healthy and they taste good as well…for sure a win win. I admit that I even like to eat them raw but I digress!

Dip a zucchini slice in the egg, and then in the cheese-breadcrumbs mix. Press to coat. Place the crumb coated slices a wire rack. Repeat with all the slices

Spray the crumb coated zucchini slices with cooking spray or mist.

Place the slices in the basket of the air fryer in a single layer, making sure that they don’t overlap.                    Air Fryer Zucchini Parmesan Chips!

Air fry in batches at 350º F for 8 minutes.

Sprinkle with salt (if needed) and pepper to taste and server hot with ketchup or salsa.                      Air Fryer Zucchini Parmesan Chips!

Note

  1. Parmesan is a salty cheese, taste one chip to make sure you need more salt.
  2. Keeping the crumb-coated slices on a wire rack, will let any lose crumbs fall off, and not clutter up the Air Fryer Basket.
  3. The time for the chips to be done, will depend on the thickness of the zucchini slices. I sliced mine very thinly and they were done in 8 minutes. Thicker slices will need more time to crisp up.

Don’t forget to print your recipe out for later!
