If you’re reading in disbelief that I’m telling you to eat dandelions – become a believer! Those “pesky” weeds that you’ve been mowing over for years are actually edible and pretty doggone good.
The key to eating dandelions is to clean them really well. I like to use a strainer and thoroughly rinse them. Once washed, I then cut the stems off the dandelions. It’s a simple process to clean the dandelions and one that everyone in the family can do.

You can eat it with anything that you want. I think that it’s super good with biscuits, Whole Wheat Sandwich Bread, or even Instant Pot Whole Wheat Dinner Rolls.

Ingredients for low sugar dandelion jelly
- 6 1/2 pint canning jars
- 2 cups dandelion petals with green stem cut off (about 4 cups with stems)
- 5 cups boiling water
- 2 tbsp. lemon juice
- 1 pouch low-sugar/no sugar pectin
- 1 cup sweetener of choice
How To Make This Homemade Dandelion Jelly Recipe
Rinse your just picked dandelions in a colander using cold water. The water will make the flowers start to close but that’s okay.
Use a pair of scissors to cut the green part of the dandelions and remove the petals until you have 2 cups of petals.
Place the petals in a large jar. Then pour the boiling water into the jar to make dandelion tea. Let the tea steep for at least one hour, but preferably overnight. Once the tea has cooled to room temperature it can be sealed and stored in the refrigerator overnight.
Place a mesh sieve over a large pot. Pour the dandelion tea into the sieve. The liquid will go into the pot and the petals will get caught in the sieve. Press the petals with a spoon to get all the liquid out.
Bring your tea to a simmer on the stove. Once the tea is simmering you can add the lemon juice and slowly whisk in the pectin until it is dissolved.
Let the tea come to a boil. Allow the tea to boil for 1 minute then remove from heat and stir your sweetener into your jelly.
Pour the hot dandelion jelly into your sterilized jars leaving 1/4 inch headspace. Hand tighten the jars and then place them in a water bath.
Process for 10 minutes. Remove the jars from the water bath carefully. I suggest using a thick hand towel or jar lifter. Cool the jars on a rack or towel on the counter overnight. Refrigerate as needed. Enjoy!
Can you freeze dandelions for dandelion jelly?
You bet. If you only have a few dandelions in your yard, collect them and freeze them until you have enough. Just put them in a freezer-safe bag and they’ll be stored for later. You can keep adding the dandelions as you get them until you have enough saved up.

It’s a “thinner” jelly but still does have a little thickness to it. It’s spreadable and not really runny, but if you want to heat it up slightly in the microwave, it will become thinner in texture as it gets warmer.

If you use any type of chemicals in your yard, you will need to forgo eating the dandelions as you don’t want to get sick. Another place to avoid picking dandelions is close to the road.
