Instant Pot Mini Candy Corn Cheesecakes
The best part about these mini candy corn cheesecakes is that they’re made in cute little mason jars! This means that everyone gets their very own dessert and no one has to share. In my house, this is a big deal.
One of the things that I don’t care for is trying to split the desserts to make them even among the boys. Since everyone gets their own little jar full of sweetness, it eliminates any of the stress! None of the arguing. None of them accusing the other of getting a bigger piece, or worse, the last piece.

Ingredients Needed To Make Mini Cheesecakes
The following ingredients are all you need to make cheesecakes in a jar.
Cheesecake Filling:
- 2 packs of softened cream cheese
- 1 cup sweetener of choice (1/2 cup if using Pyure which is my preference)
- 2 teaspoons of vanilla extract
- 2 eggs
- red and yellow food coloring
Crust:
- 12 Tablespoons of boxed brownie mix (I used sugar-free and gluten-free!)
- 6 Tablespoons of cold butter
Toppings:
- Sugar-free Candy Corn and whipped cream (this is optional)

How To Make Easy Mason Jar Cheesecakes
First, grab a bowl and mix together all the cheesecake filling ingredients minus the eggs.
Now after it’s smooth, add in the eggs and mix. But don’t overmix. Just enough to where you can’t see the eggs anymore.
You then want to split the mixture in between two bowls. Put the yellow food coloring in one of the bowls and stir. Do the same with the orange food coloring in the other bowl with the mixture. Add as many drops as you’d like to get the right colors.
Once that is done, add 2 tablespoons of brownie mix to the jar. Place 1 tablespoon of cold butter on top of the brownie mix. No need to mix at this point.
Now put in the cheesecake filling in layers with the yellow first, followed by the orange. Give the jar a gentle tap to settle the filling and get rid of air bubbles.
Once you’re done, it’s time to cook in the Instant Pot. Add 1 cup of water to the bottom of the pot and place a trivet inside. Put the jars on the trivet in the Instant Pot and don’t let them touch the bottom of the pot. The use of the trivet is extremely important.
Attach the Instant Pot lid and secure it. Cook on high pressure for 3 minutes and then natural pressure release. Carefully remove them from the Instant Pot using tongs or a towel and let them cool on the counter. They should reach room temperature before adding them to the fridge to chill for 5 hours.
Top with whipped cream and candy corn and enjoy!
Tips For Making Mini Cheesecakes
If you do decide that you want more of a brownie crust you can increase the brownie mix to 4 tablespoons, but also add 2 tablespoons of butter. This will give it a bit more of a fudge texture with a little bit of crispiness scattered throughout.
How do you store cheesecakes?
The biggest thing that you have to remember is that you need to store cheesecake in the fridge. Due to the ingredients added, you have to make certain to keep them nice and cool.
Since you’re making these cheesecakes in a jar, you can easily just add a lid on top or even some plastic wrap or aluminum foil. That way, when it’s time to chow down and enjoy, they’re ready and easy to grab!
What toppings go great with cheesecake?
I’m a huge fan of whipped cream, but you can easily use other toppings if you like. Some of the toppings I’ve used have been chocolate chips, chocolate shavings, chopped-up candy corn pieces, a drizzle of hot fudge, and a drizzle of caramel sauce.

Since this is such a fun way to serve cheesecake, the options are endless about how and where you can serve them.
You can easily serve them just like the recipe calls for or have fun and think outside the box. I think that these would be great for a fun fall dessert for a family gathering, family reunion, picnic, church gathering, fall festival, or Halloween party.
I also think that these would be a super cute treat to have waiting for the kids after a long night of trick-or-treating. Since they’re probably going to be tired after all that walking around, they’d be super excited to have this yummy treat waiting when they got home!
