Just because you eat a special diet doesn’t mean you need to go without flavor. You may have thought that having chili wasn’t an option. Well, you can have chili and it can be vegan focused. You just need to know what to have in your chili.

While looking at the ingredient list, it does seem like a lot. However, a lot of this recipe is measuring and pouring. Once you get it into the actual Instant Pot, you’re good to go. 

 

 

I first got my Instant Pot a few years ago and it’s been life changing. To be able to make meals on the fly, especially when you lead a busy lifestyle, is important. Not everyone can afford, nor has the will, to eat out for every meal. The Instant Pot brings home cooked meals to your family very quickly, which is something I LOVE. 

 

Two of my favorite gadgets to have in my kitchen are the Instant Pot and the Air Fryer. If you’re a mom or just a person that loves to cook, then I think you’ll find both of these gadgets worthwhile.

Well, there are a lot of seasonings in this chili, which makes it yummy. No one wants a chili that is bland. Other ingredients in this chili include carrots, red beans, black beans, onions, zucchini, and much more.

Are Beans Good in Chili?

Yes! In my opinion beans are what make the chili. Beans bring in the protein and add flavor. Since you’re not going to add any meat in this chili, it’s important to have some beans in it. 

 

This recipe focuses on red beans and black beans. Contrary to popular belief, red beans and black beans are not the same beans. Red beans are more like pinto beans and very red in color.

Not only are red beans a great protein source, but you will also find that they are rich in antioxidants. Red beans help to reduce the risk of cancer, helps prevent diabetes, and offers better heart health. 

 

Black beans are equally as healthy and offer lots of flavor in this Vegan Chili. Black beans are well known for being rich in protein and fiber. 

 

Is the Instant Pot Easy to Use?

As with any new kitchen gadget, a learning curve is involved. Practice makes improvement. The more you use and get used to it, it will become a favorite in the kitchen. 

 

My only advice on buying an Instant Pot would be to make sure it’s the real Instant Pot and not a knock off. You also want to ensure your Instant Pot is big enough. You don’t want to buy a small Instant Pot and then it’s not big enough to cook all the food you need. 

 

Some of my favorite recipes include: Quinoa, Homemade Fideo Soup, and Instant Pot Meatloaf. You can even boil eggs in the Instant Pot. Talk about versatility!

How Do I Store Instant Pot Vegan Chili Leftovers?

Raising three boys, it’s rare to have leftovers in my house. But if you have leftovers and need to store this chili in the fridge, make sure it’s in an airtight container. You will be glad to know that this chili will last around 3-4 days in the fridge. 

 

You can also freeze the chili, which will last much longer. Just make sure it’s in a proper freezer container.

Instant Pot Vegan Chili

Serves – 8

Instant Pot Vegan Chili

Ingredients

  • ½ cup of dry Red Beans, washed and rinsed
  • ½ cup of dry Black Beans, washed and rinsed
  • 6 cups of Water
  • ½ cup of Steel Cut Oats, washed and rinsed
  • 1 large onion, cut into big chunks
  • 2 fat cloves of Garlic
  • 1 bay leaf
  • 2 large Carrots, chopped
  • 4 stalks of Celery, chopped
  • 2 medium sized Zucchini, chopped
  • 1 large Red Bell Pepper, chopped
  • 1 (15 oz.) can of Diced Tomatoes (no-salt added)
  • 2 heaped tablespoon of Tomato Paste
  • 1 tablespoon of Brown Sugar
  • 1 teaspoon of Mexican Oregano
  • 1 teaspoon of Garlic Powder
  • 1 teaspoon of Ground Ginger
  • 1 teaspoon of ground Cumin
  • 1 teaspoon of Paprika
  • Salt to taste
  • ½ cup of roughly chopped Cilantro
  • Cherry tomatoes, jalapeno, cilantro to garnish

 

Instructions

Place the washed and drained red and black beans in the Instant Pot insert.

Add the roughly chopped onions, garlic cloves and a bay leaf. Add 6 cups of water.

Select the “Pressure Cook” mode and adjust the time with the “- / +” to 40 minutes.

When Instant Pot beeps, let the pressure release the naturally.

 

Now add the diced tomatoes, tomato paste and the steel cut oats. Mix it well.

Add the chopped carrots, celery, red bell pepper and zucchini.

Add the brown sugar, oregano, cumin, garlic powder, ground ginger, paprika and salt.

Give a good mix and attach the Instant Pot lid.

 

Press ‘Cancel’ and again select the “Pressure Cook” mode and adjust the time with the “- / +” to 15 minutes.

 

When Instant Pot beeps, let the pressure release the natural way for 5 minutes. Using the plastic spoon that came with the instant pot, turn the pressure valve to “Venting” position to perform the quick release.

Add chopped cilantro and stir it in. Check for seasoning and adjust the salt accordingly.

  12. Serve piping hot with a garnish of jalapeno slices, halved cherry tomatoes, cilantro and a slice of Cornbread.
