Low Carb Grinch Cookies
Low Carb Grinch Cookies are the perfect holiday treat. Loaded with yummy flavor without all the yucky carbs! Who says that you have to give up your low-carb lifestyle during the holiday months? These baked goodies are delicious, tantalizing, and the aroma is absolutely wonderful!

Low Carb Grinch Cookies
Call me biased, but these low-carb yummy, delicious baked treats are not only awesome, but the recipe is incredibly versatile. I can make them in my air fryer or my oven, or even use both at the same time.
The fact that I can make these in both the air fryer and the oven gives me more options. And let me tell you, options for baking are good, especially around the holidays. When my oven is being used for other things, but my air fryer is free, I can cookies until my heart is content. Being able to use my Air Fryer means that I can cook my cookies quickly and not have to wait!
These easy Christmas cookies are perfect for eating at home or making and sharing with all of your family and friends! You also could bake these and place them into a fun holiday tin and gift them to others!
Ingredients needed to make Low Carb Grinch Cookies
- 2½ cups of Blanched Almond Flour
- ¼ teaspoon of Xanthan Gum
- ¼ teaspoon of Salt
- ¼ cup of Butter- softened
- 2 oz. of Cream Cheese, softened
- 6 tablespoons of Pyure (or a low carb sweetener of choice)
- 1 large Egg
- 1 teaspoon of Vanilla Extract
- 1 tablespoon of Heavy Cream, if needed
- Few drops of Neon Green Gel Food Color
- Red Heart Sprinkles
How to Bake Grinch Cookies
Combine the butter, cream cheese, and pyure in a large bowl. Beat on low for a minute and then increase the speed to maximum and beat it until light and fluffy.
Add the egg and vanilla extract and beat again for another minute.
Add the almond flour, xanthan gum, and salt and mix it on low till it reaches a cookie dough consistency.
If the dough looks too dry, add a tablespoon of heavy cream.
Add the neon food color and mix well.
To Bake the cookies in the oven:
Preheat the oven to 350F and line a cookie sheet with parchment.
Using a cookie scoop, add scoops of dough to the prepared cookie sheet. Use the palm of your hands or the bottom of a glass to gently flatten the cookies.
Bake at 350F for 12 minutes.
Remove from the oven and while the cookies are still warm, press a heart sprinkle on the left side of the cookie.
Let the cookie cool in the cookie sheet for 5 minutes, before transferring to a cooling rack.
Store the cookies in an airtight container.
To make the cookies in the air fryer:
Line the air fryer basket with parchment paper.
Using a cookie scoop, add scoops of dough to the prepared cookie sheet. Use the palm of your hands or the bottom of a glass to gently flatten the cookies.
Air fry at 300F for 8 minutes.
Place the air fryer basket on a trivet and while the cookies are still warm, press a heart sprinkle on the left side of the cookie.
Let the cookie cool in the air fryer basket for 5 minutes, before transferring to a cooling rack.
Store the cookies in an airtight container.
Will air fryer cookies be crunchier than baking them in the oven?
I think they are a bit but in a good way. Granted, this might be a matter of opinion, but we think air fryer cookies have a bit more crunch than oven-baked cookies.
It’s because the frying method through circulating air in the air fryer is what adds that nice, crisp texture.
How do you know when cookies are done baking?
The easiest way to tell that cookies are done baking and ready to be pulled is to watch the edges of the cookie. They’ll start to turn brown, which is your indicator that they’re ready to be taken out of the oven to start the cool-down process.
Can you freeze cookies once they’re baked?
Absolutely! Not only can you freeze them, but it’s a super simple way to have dessert in the freezer at all times! I’ve frozen baked cookies and also cookie dough.
When I put my cookies in the freezer, I do put them in individual baggies so that I can grab a small bag of cookies and unthaw them rather than the entire batch.
